Pasta Primavera

I make a filling pasta primavera - tasty the first time, and readily available for 2nd or third helpings. It's always gone within 48 hours, served cold or hot.

Ingredients:

1 pkg mushrooms
1 medium red onion, chopped
2 cloves garlic
1 zucchini diced
1/2 cup fresh basil leaves
2 medium tomatoes, diced
1 package pasta, linguine or fettucini
3 tbsp olive oil
1 tbsp chopped fresh oregano
1/2 tsp salt
1/4 tsp pepper
1 cup bacon, cooked and chopped (optional)

Directions:
  1. boil 6 cups water
  2. add 1 tbsp olive oil & a dash of salt
  3. add pasta to water
  4. add 1 tbsp olive oil, onions and garlic to a saucepan and heat on med-high
  5. add mushrooms when onions begin to soften
  6. add zucchini and tomatoes when mushrooms begin to reduce
  7. strain pasta and add to bowl with vegetables
  8. add 1 tbsp olive oil, oregano, basil, salt & pepper (and bacon if desired)
  9. toss and serve
