Ingredients:
1 package pasta, swirls or shells preferred
1 butternut squash, medium
1/2 tsp salt
1/4 tsp pepper
1/2 tsp cumin (optional)
1 tbsp cilantro, chopped
3 tbsp olive oil
grated cheese to top
Directions:
- boil 6 cups water
- peel & cube butternut squash
- add dash of salt, 1 tbsp olive oil
- add pasta to water
- boil 1 1/2 inches of water in a steamer
- add butternut squash to steamer
- drain pasta, place in bowl
- when soft, add butternut squash to pasta
- add cumin, cilantro, olive oil, salt & pepper
- mix thoroughly until squash is smooth
- serve and top with cheese
